Our crusty breads are baked in the oven without a tin, and with the addition of steam during the start of the bake. This gives a loaf with a nice open texture and fantastic crust. We have changed some of our working practices over the last year or so, so we no longer bake on the oven floor. Also we don’t slice crusty breads.
